On a previous page I used zucchini noodles with squash. Here I have added in "sausage" (the one above is plant based). This is a great example of a recipe where having left overs or cooking extra pays off. I love the idea of big batch cooking! I can use that extra container/package of zucchini or that extra leftover sausage from a dinner earlier in the week. Combine them and it's another whole meal!
INGREDIENTS:
1 container/package of spiralled zucchini noodles
2/3 sausages
2 cups baby spinach
4 green onions chopped green stem and all
1 to 2 tablespoons of olive oil
Salt/pepper
DIRECTIONS:
-If sausages need to be cooked do so until done OR reheat on low heat with oil
-Toss in zucchini noodles to warm through and add in salt and pepper
-Add in spinach
-Plate and top with green onion

***Play with the flavour! Try green chilli sausage with spicy sriracha oil on the zucchini noodles, top with jalapeños and cilantro if you can take all the heat!! Apple sausage with a walnut oil. Italian sausage with garlic oil and parsley. So many options do not be afraid to experiment!***
