This is a great summer recipe! Try marinating the shrimp in the olive oil and garlic and GRILL them! It really adds a great flavour. Also, this recipe taste better with lots of fresh ground pepper!
INGREDIENTS:
1/2 box of angel hair pasta
4/5 jumbo shrimp per person
1 small container of baby spinach
1 can sweet corn rinsed
1/2 of small container of cherry tomatoes
1/4 teaspoon minced garlic
Olive oil
1/4 cup of feta cheese crumbles (OPTIONAL)
Pepper
DIRECTIONS:
-Boil pasta according to box directions
-In a large skillet on medium heat add a tablespoon of olive oil and garlic to the skillet, cook until you start to smell the garlic, add in shrimp and cook approximately 5 minutes on each side or until done
-Halve the cherry tomatoes
-Warm corn
-In a large bowl add in drained pasta, toss with a drizzle of olive oil and add pepper to taste
-Toss in spinach, corn, shrimp, and cherry tomatoes
-If needed drizzle a bit more olive oil
-Top with feta cheese
