One Skillet Enchilada
Ingredients:
2 teaspoon olive oil
1 small onion chopped
1 small red pepper chopped
1 small orange pepper chopped
1 small yellow peppe chopped
1 can black beans drained/rinsed
1 can corn drained/rinsed
8 - 10 soft tortillas torn into bite size pieces
1 24oz jar of chunky salsa
2 packages of microwavable Spanish rice (already cooked)
1 c of shredded cheese (I use non dairy cheddar)
2 teaspoons ground cumin
2 teaspoons paprike
1 teaspoon garlic powder
Optional: fresh cilantro, parsley, or chives to garnish
Directions:
-Heat oil in large skillet over medium heat
-Add in peppers and onions cook until tender (about 7 - 10 minutes)
-Add in beans, corn, rice, salsa, spices - combine well - add in tortillas and cheese - combine again
-Cook another 10 minutes on low until everything is heated through and the cheese is melted
- Top with fresh herbs
