Ingredients:
1 head of cauliflower cut into pieces
1 small bag of baby red potatoes cut into halves
1 cup chopped carrots
1 cup chopped celery
1 cup yellow onion chopped (1/2 of an onion)
1 can of lentils drained/rinsed
3 cups veggie broth
1 cup water
1 can low fat coconut milk
2 tbs of cumin
2 tbs coriander
2 tbs garam masala
1 1/2 tsp of turmeric
1/8 tsp cayenne pepper (OPTIONAL)
4 tbs olive oil divided in half
salt/pepper
OPTIONAL - Fresh chopped herbs for garnish (parsley, chives, green onions)
Directions:
Pre-heat oven to 450
Place cauliflower pieces on a baking sheet and drizzle with 2 tbs olive oil - bake until tender and starting to brown about 20-25 minutes
Meanwhile in a large pot heat 2 tbs of olive oil on medium high heat and start to cook the carrots and celery until tender
Add in onion cook until tender
Add in lentils, broth, water, coconut milk and spices - stir
Add in baked cauliflower
Add in potatoes and cook until potatoes are tender about 15 -20 min on medium heat
Salt and pepper to taste
Optional chopped herbs after served
