INGREDIENTS:
2 to 3 mangos cut into small chunks
½ pineapple cut into small chunks
½ red onion chopped
1 large avocado cut into chunks
3 green onions chopped
1 can black beans drained and rinsed
1 large lime (the juice from it)
¼ cup chopped fresh cilantro or parsley
8 large tortillas
DIRECTIONS:
When cutting up the mango and pineapple keep the juice and pour into the serving bowl
Combine all the above ingredients and gently mix all together
Refrigerate for an hour to chill through
Meanwhile
Pre heat oven to 350
Using a pizza cutter or sharp knife cut tortillas into triangle shaped pieces
Spread on a baking sheet and bake about 15 to 20 minutes until they start to slightly brown
Remove and let cool
Serve the salsa and chips as an appetizer or as a side dish
