INGREDIENTS:
1 large flatbread
1 can black beans (drained/rinsed)
1 can tomato chopped
¼ cup red onion chopped
¼ cup green onion chopped
2 cups shredded lettuce
¼ cup corn (drained/rinsed) or BONUS cut off the cob
1 cup chunky salsa
1 avocado sliced
¼ cup cilantro or parsley or a combo of both
1-2 tbs of taco seasoning (low sodium) or to taste
OPTIONAL ADD ONS:
¼ cup sour cream
¼ cup black olives
¼ cup spicy or mild peppers
¼ cup Mexican shredded cheese (even non-dairy)
Sriracha sauce
Salsa verde
DIRECTIONS:
-Pre-heat oven to 350
-Mash up black beans till “somewhat” smooth then ass in taco seasoning
-Spread beans onto flatbread and bake in oven 15-20 minutes till warmed through
**If using cheese top now over beans then bake**
-Meanwhile shred or chop veggies
-Remove flatbread and begin to layer over beans
-Salsa
-Lettuce
-Tomatoes
-Onions
-Optional toppings, olives and peppers
-Arrange sliced avocados on top of veggies
-Top with cilantro
-If using sour cream dollop on top
-If using sriracha or salsa verde add on top (or on the side)
