This is a great anytime season salad...the beans and the nuts give you plant based protein. This can always be topped with a lean grilled chicken breast
INGREDIENTS:
Mixed salad (try buying this in the bulk/family package as it is a great and quick add on to any meal even breakfast!)
1 small red apple of your choice (my girls like Honeycrisp)
1/4 cup of chick peas aka garbanzo beans
3 small tomatoes sliced up
2 to 3 tablespoons of walnuts (or you can use almonds or pistachio nuts...just look at serving sizes)
2 to 3 tablespoons of craisins or dried cranberries
!/2 a cucumber diced up
The salad above is topped with serving size of Poppy Seed Dressing...a Balsamic Fig would pair nicely too!
