This is super simple, quick and healthy when you are short on time.
TIP: Buy the zucchini pre spiralled and the squash pre cut to save time usually found in the produce section or even in the frozen foods (If frozen follow package directions)
INGREDIENTS FOR ZUCCHINI:
2 containers/packages spiral zucchini
1 container/package squash
2 tablespoons of garlic infused olive oil
Salt/pepper
FRESH SIDE VEGGIES:
1/2 seedless cucumber
8 (ish) cherry tomatoes
3 green onions
Favourite vinaigrette or olive oil and salt/pepper
DIRECTIONS:
-In a skillet medium heat with 1 tablespoon of the oil, cook the squash until tender and slightly browned
-Add the the second tablespoon of oil and gently toss in the zucchini add pinch of salt and generous amount of ground pepper turn heat to low just to keep warm
SIDE VEGGIES
-Chop up cucumber
-Half tomatoes
-Cut up green onions stems and all
-Mix with vinaigrette or drizzle with olive oil and salt pepper
Plate up and ENJOY!
***Be carful to keep the zucchini noodles on low, they cook fast and will become soggy if let on high temps or cooked too long***
