INGREDIENTS:
2 cans black beans (drain/rinse) + 1 Can blended
1 can lentils (drain/rinse)
1 1/2 c carrots
1 large onion chopped
2 tsp minced garlic
1 can corn (rinse/drain)
1 can crushed tomatoes
3 cups veggie broth
1 tbs
cumin
1 tbs chili powder
1 tbs coco
1 tbs cinnamon
1 1/2 small limes( juice and other half garnish)
pinch of cyan pepper (optional)
Salt/pepper
GARNISHES OPTIONAL:
Cilantro
Avacodo
Green onion chopped
Red onion chopped
Hot/mid peppers
Fresh lime wedges
Crumbled Queso Fresco
Shredded blended Mexican or plant based cheese
Sour cream, greek yogurt, or plant based yogurt
DIRECTIONS:
In a large pot add in carrots and a bit of veggie broth cook on medium heat until carrots start to become tender
Add in onion and cook until it starts to become tender about another 5 minutes add in garlic and turn heat to low let simmer for another 5 minutes
Meanwhile blend one can of the black beans to a thick constancy
In the large pot...Add in 2 cans black beans, lentils, corn, tomatoes, veggie broth and spices....mix well
Begin to stir in the blended beans and the juice of the lime
Let simmer simmer with occasional stirring for about 15/20 min until everything is heated through
Set up a topping bar when serving at parties and get creative with your combinations!
PART 2:
Let overs are the BEST! All the flavors have marinated together and it also takes the guess work out of yet another week night meal.
Serve later in the week over a sweet potato or baked potato and top with fresh herbs and whatever else you're in the mood for!
