Ingredients:
1 large flatbread (I use Brooklyn Bread brand)
5 to 6 butter/yellow potatoes thinly sliced
1 large yellow onion thinly sliced
1/4 cup plain or garlic hummus
2 tablespoons of olive oil
Few springs of fresh rosemary
salt/pepper to taste
Chopped fresh parsley
Directions:
Pre-heat oven to 450
Place potatoes, onions, and rosemary on baking sheet drizzle with olive oil and salt/pepper
Combine well so everything is evenly coated
Bake for 20 - 25 minutes until golden brown
Meanwhile spread hummus on flatbread
When potato mixture is done spread evenly over hummus...return to oven another 10 - 15 minutes to warm through
Top with chopped parsley
