Let me first start by saying I am not Italian..I'm German and Irish...so I am positive there is an old Italian family recipe out there that would knock my Italian wool socks right off!
This is just a great way to use up extra and overly ripe tomatoes that I've had on hand...
1 large package of tomatoes - overly ripe work well
1 large chopped yellow onion
olive oil
2 tbs of minced garlic
1/2 cup of good quality grated parmigiano or Italian cheese blend
fresh basil about 1/2 cup chopped
salt/pepper
Pre-heat oven to 350
Spread out tomatoes on a baking sheet - coat with olive oil a bit of the salt and pepper and garlic
Bake until they become tender and start to split open
Meanwhile ..In a large pot sauté onion in a bit of olive oil until tender and just starting to brown
Add the tomato mixture to the pot with the onions
Add in cheese
Add in basil
With an emersion blender (or carefully transfer to a food processor) pulse/blend until mixture becomes mostly smooth..I personaly like it bit chunky
Additional salt and pepper may be needed for taste
This stores well in the fridge for several days and I actually use old sauce jars for storage
