-I've used sweet potatoes for this BUT this is a great way to use up extra mashed potatoes you may have espically around the holidays. Just make sure to mix in a little extra milk or water to them so their not dry when you put them in the baking dish.
INGREDIENTS:
2 large sweet potatoes (precooked)
2 cups shredded brussel sprouts
1/4 cup craisins
1/4 cup chopped walnuts
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/4 teaspoon red pepper
2 tablespoon olive oil
Salt/pepper
DIRECTIONS:
Pre heat oven to 450
-In a small baking dish (7x11...you may want to spray or lightly grease the dish as not to stick)
-Peel and mash up the sweet potatoes
-In a skillet on medium heat, cook the shredded sprouts in the olive oil till tender about 15 minutes add a pinch of salt and pepper
-Mix all the spices together and sprinkle over the potato mixture
-Add in the craisins and walnuts to the sprouts and spoon over sweet potatoes
-Bake in oven about 15 - 20 min till warmed through
